The Honolulu Cookie Company is a Hawaii-based company selling premium shortbread cookies. It started as a cottage industry by a couple in 1998 selling pineapple-shape cookies with a variety of flavours designed around the island theme. The trademarked pineapple-shape shortbread biscuits can now be found across the whole United States and the Pacific through their retail stores. Since Hawaii was where it started, there are already nine retail stores in Honolulu alone. I visited the one at Waikiki Beach and the store has a vey cosy layout. All the cookies are nicely packed in gift wraps and I bought a few packs back as souvenir.
